Pompadour opened its first shop in 1969 in Motomachi,Yokohama as a large variety low volume oven fresh bakery.Upon opening,in order to produce authentic bread never available in Japan up until then,two craftsman(technical leaders of French bread and Danish Pastry) were brought in from Europe,the birthplace of bread,and the technology has be en faithfully passed down to the present.

In order to provide the deliciousness of freshly baked bread, all Pompadour shops are one shop,one factory system. In addiction,frozen dough is not used and bread is made by the straight kneading dough method where the dough is made from flour. It is one continuous manufacturing method of the complicated bread baking process of preparation,primary fermentation,division,bench rest,shaping,secondary fermentation and baking without rest. Almost all bread in the shops are made with the straight dough method and at the same time,all processes at the factries attached to the shops employ the “All Scratch Method” so that delicious freshly baked breads are available at the shops at any time.

While keeping the traditionalway,we had innovated something new.

With the straight dough method ,it takes up to 6 hours from ingredients selection,preparation,shaping,fermentation and baking. Preparing the dough early in the morning at 4:00am makes it possible to have freshly baked French bread available in the shops at the same time as they open. To realize this is not an easy task,however we feel “we really want to provide delicious freshly baked bread” and we are confident that “our French bread is second to none” and therefore this is the best way to do so.

In addiction to French bread and Danish pastries,there are currently over 1,800 Pompadour bread recipes that have continued to increace since its founding. 100~150 different types from these are available at a shop and you can select from a variety of breads in addition to the standard breads. At Pompadour,each and every one is dedicated to freshness and quality to preserve the true deliciousness of bread and they continue to bake bread in order to deliver it to costomers.
